  14. 1" cinnamon stick
  15. 3 green cardamoms
  16. 5 cloves
  17. 2-3 bay leave
  18. 1 star anise
  19. 1 mace
  20. 1 tsp. whole pepper
  21. 1 tbsp. coriander seeds
  22. 1 tsp. cumin seeds
  23. 1 tsp. mustard seeds
  24. 1/4 tsp. fenugreek seeds
  25. 1 tsp. fennel seeds

Steps to make to make Chicken Korma

  1. Dry roast the coconut separately till golden colour. Keep aside to cool. Roast rest of the spices in a hot pan for a few seconds. Cool and grind into a powder along with the roasted coconut.
  2. Heat oil and saute the onions till light brown.
  3. Add the tomatoes and continue to saute till it is mashed.
  4. Add 2 tbsp. of the prepared ground spice and mix well.
  5. Add the chicken, salt, turmeric powder and curry leaves.....

  7. Add the tomato paste and continue to cook till the gravy is dry.
