  1. Sprinkle some corn flour on the mushrooms and keep aside for 10mins. Then rinse the mushrooms well to remove all the dirt. Drain and keep aside. Heat olive oil in a pan, add garlic and sauté. Add the chopped onion and sauté them till translucent. Do not let the garlic brown. Now add the chopped mushrooms. Sauté the mushrooms till the shrink in size. Add the mixed herbs and salt. Mix well.
  2. Once the mushrooms are well browned it means they are cooked. Add the vinegar. In a bowl take the soya and chilli sauce with the cornflour and mix all three with water. Add this to the mushrooms and stir well so that you get a thick gravy that coats the mushrooms well. Garnish with spring onion greens and turn off the gas. Serve these mushrooms with roti bread or rolled in tortillas. I made cones with tortillas and served these Italian Chinese-Garlic Mushrooms in them.
